Gyoza is usually best paired with a wine with a touch of sweetness. Gyoza is a Japanese pan-fried dumpling and they are usually mild in flavour, but the sauce is more aromatic with flavours of rice vinegar, soy sauce, chili flakes, garlic and ginger. A sparkling or a white with good acidity are good pairings for the sweet and sour sauce.
Riesling is the most famous aromatic white wine. It is a very fresh wine with floral aromas and intense citrus flavours. Thanks to its high acidity and hint of sweetness, it matches perfectly with a wide range of food.
